Apple & Walnut Ginger Loaf
2 cups oat flour
2 tsp baking powder
1 tsp bicarbonate of soda
2 chia eggs (I used chia bia milled chia seeds)
1 large apple grated
2 tsp cinnamon
2 tsp ground ginger
1 large apple chopped finely
2 large handfuls of walnuts broken up
1/2 cup oat milk
1/2 cup yogurt
1/4 cup extra virgin olive oil
2 tsp apple cider vinegar
Make up your chia eggs by adding 2 tbsp milled chia seeds (whole chia seeds work well too) with 6 tbsp water, mix and leave to thicken.
In a bowl add the oat flour along with the baking powder, bicarbonate of soda, cinnamon and ground ginger and mix together.
Add the chopped apples and walnuts and stir these through to coat in the flour mix, this way it helps prevent the apple pieces from sinking to the bottom
In a jug add the milk, yogurt, extra virgin olive oil and apple cider vinegar and mix together, pour this in with the flour mix along with the chopped apple and chia eggs and mix together (trying not to over mix)
Pour into a lined loaf tin (this also works well in a normal cake tin)
Pop into a pre heated oven at 160c for approximately 40 minutes or until a skewer inserted comes out clean.
Allow to cool completely before removing from the loaf tin
