Have you ever watched “The Goonies”?
well they have these bars called baby Ruth which obviously we couldn’t get over here in England in the 80s and i so wanted to try them, so I decided to recreate it with a little nourishing amendments and boy are they tasty!
Packed with protein from the peanut butter, wholegrain oats and only a small amount of unrefined agave, they are so moorish and make a great post workout snack, or an anytime snack, I even added in some sneaky collagen powder for that extra nourishing boost!
Baby Ruth Bars
1/2 cup oats
1/4 cup peanut butter
1 tbsp collagen powder
1 tsp agave syrup
1 tbsp coconut oil
Salt (if not using salted peanut butter)
1/4 tbsp roasted peanuts
50g dark chocolate
In a blender add the oats, peanut butter, collagen powder, agave syrup, coconut oil and salt and blend until smooth.
Add the roasted peanuts and blend until they are broken and mixed through.
Spoon the mixture into a lined loaf tin pressing down to compact.
Pop into the freezer to harden
After around 20 minutes, remove and cut into small bars sizes
Melt the dark chocolate and dip each bar coating all side and place on baking paper and once you have coated all of them, transfer them to the fridge to harden and then enjoy
