Banana, Cauliflower and Açai Cacao Pancakes

Let’s just say that at the moment Chocolate is featuring a lot during the day in our house, breakfast, snack and dessert and rightly so.

Did you know that Cacao contains 4 mood boosting chemicals, serotonin, tryptophan, tyrosine and phenylethylamine that can help to increase feelings of contentment and improve symptoms of anxiety and depression.

And the fact that cacao contains amazing amounts of antioxidants, magnesium and iron, you really can’t go wrong with adding some cacao to your morning routine or any other time.

so these tasty pancakes not only contain a great dose of mood boosting cacao but also cauliflower, banana and açai…the perfect start to a morning I think!

Banana, Cauliflower and Açai Cacao Pancakes

1 cup Oat Flour (Blend rolled oats in a food processor)

3 heaped tbsp Cacao powder (naturya)

2 tsp açai powder

2 tsp baking powder

1 small banana

2 tbsp Flaxmeal (optional)

4-6 cauliflower florets

2 tsp apple cider vinegar or 2 eggs

Milk

Method

Add all the ingredients into a high speed blender (I use a nutri bullet) along with enough milk to make a thick batter.

Heat a small amount of olive oil in a large frying pan on a medium heat.

Once hot, spoon the thick batter into the pan and cook

Remove the cooked pancakes and continue cooking the remaining batter.

Serve with a little yoghurt, nut butter and berries and enjoy
