Banana, Courgette and Cacao Pancakes

It’s safe to say that at the weekends, pancakes take president and these delicious cacao pancakes are not only tasty but are packed with some wonderful nutrient rich ingredients that makes indulgence healthy.

we love to make these smoothie pancakes as you can literally throw in whatever you fancy into the blender and make incredible pancakes.

Make up extra and these are great to freeze for those mornings that time is a little stretched. They are so versatile that you can even make them savoury if you wished although we are definitely sweet breakfast kind of people.

In this recipe we used banana, courgette and cacao but of course feel free to play around with some flavours.

So here it is, my easy to make smoothie cacao pancakes that I am sure will become a firm favourite in your house too and why not get the kids to make them, as this is a fun cooking task that even the kids can do.

Banana, Courgette and Cacao Pancakes

1 cup Oat Flour (Blend rolled oats in a food processor)

2 tbsp cacao powder (heaped)

2 tsp baking powder

1 tbsp Flaxmeal (optional)

1 small Banana

1/2 small courgette finely grated

2 tsp apple cider vinegar or 2 eggs

1 soft medjoul date (optional)

Milk

Method

Add all the ingredients into a high speed blender (I use a nutri bullet) along with enough milk to make a thick batter.

Heat a small amount of olive oil in a large frying pan on a medium heat.

Once hot, spoon the thick batter into the frying pan and cook until the underside starts to go golden. Flip the pancake and cook the other side.

Remove the cooked pancakes from the pan and continue cooking the remaining batter.

Serve with a little yoghurt, nut butter and berries and enjoy
