BBQ Tempeh Tostadas

well this weather sure has been kind to us and that certainly means eating al fresco and BBQs outside.

We’ve been making the most of the weather and the lockdown with days spent mostly outside playing, walks, games, reading, whatever we can make the most of it.

These simple to make tostadas are so easy to make and taste amazing. In this recipe I’ve used Plant Power BBQ tempeh but if you can get hold of it, simply use normal tempeh Andy marinate in a BBQ sauce.

Serving these BBQ tostadas with a cool avocado and mango salsa is a great combination and definitely gives them a tropical feel.

BBQ Tempeh Tostadas with avocado and mango salsa

10 Corn tortillas

1 pack BBQ Tempeh slices

1 avocado

1 small mango

1 lime


In a pan add a little olive oil and heat over a medium high heat.

Add the corn tortillas and cook until crispy and repeat with the remaining tortillas. Set them aside until ready to use.

Place the BBQ Tempeh in the oven for approx 18 minutes until cooked through.

Chop the avocado and mango into small pieces

In a bowl add chopped avocado and chopped mango pieces and season lightly and squeeze over some lime juice. Add some chopped coriander and stir everything together. You can add tomatoes if you wanted as well.

Chop the tneph into small squares

Take one tostada and top with the avocado and mango salsa and then top with hen tempeh.

Sprinkle over a little coriander and serve along with the tomato quinoa an a fresh salad.
