Blueberry & Pumpkin Seed Breakfast Bars

200g oat flour

1 tsp baking powder

1 flax egg or 1 chia egg

1 mashed ripe banana

2 tbsp extra virgin olive oil 

4 tbsp maple syrup

1/4 cup Oat Milk

2 handfuls of blueberries

1/4 cup pumpkin seeds

In a bowl combine the oat flour, baking powder, blueberries and pumpkin seeds and mix through. 

Add the mashed banana, flax egg or chia egg, extra virgin olive oil, maple syrup, and oat milk and mix together

Pour this into a lined loaf tin, making sure the smooth and flatten it out.

Pop into a pre heated oven at 170c for approx 20-25 minutes or until cooked through.

Allow to cool completely before removing from the pan and cut into nice bar sizes to enjoy as a snack or breakfast on the go.
