Cauliflower & Chia Seed Pizza

We all know by now that we can make pizza from cauliflower but most of the time it requires egg or cheese to hold the cauliflower together, so I decided to try and make it vegan and keep it gluten free and I finally perfected the recipe and it’s a winner!

Ive never really been a big pizza fan, you know the doughy pizza base with tomato sauce, cheese and pepperoni so making it more appealing for me was a big mission.

This base holds so well together that you can easily slice it and eat with your hands. I love to top mine with pesto (my preferred choice over tomato sauce) or a delicious muhammara and of course lots of veggies and sometimes some homemade tofu ricotta.

Of course if you like a tomato sauce pizza feel free to add this on with whatever veggies you like, and that’s the great thing about pizza, you can be as creative as you like!

Cauliflower & Chia Seed Pizza Base

makes 1 medium pizza

1 cup cauliflower

1 chia egg (1 tbsp chia seeds and 2 tbsp water)

1 tsp psyllium husk powder

3 tbsp almond flour or ground almonds

salt

In a food processor add the cauliflower and blitz until really really fine

Add the chia seeds And the water to a small bowl and mix and leave to set for around 10 minutes

Add the chia egg, psyllium husk powder, almond flour and salt to the cauliflower and whizz until it all comes together in a dough

Roll out the dough between two bits of parchment paper and then place on a baking tray (on a sheet of parchment paper)

place into a pre heated oven at 180c for around 15-20 minutes or until golden and cooked through.

Top with your favourite sauce and veggies and either eat straight away or place in the oven to cook a little further with the toppings
