Chocolate Veggie Waffles

Everyday I’m Waffling 💕🤣

Weekends call for chocolate waffles and not just any chocolate waffles but Spinach, Courgette, Ginger, Pear and Cacao Oat Waffles!

One of the great things about pancakes, waffles, porridge, smoothie bowls is that you can get creative and add in so many wonderful vegetables and fruit!

Vegetables and fruit contain amazing and powerful antioxidants, phytonutrients, vitamins and minerals that we can’t get from any other food. They contain disease resisting chemicals. They can support heart health, brain health, skin health, have anti-ageing properties, reduce risk of heart disease, type 2 diabetes, some cancers, support the immune system and balance hormones!

Eating the rainbow is vital for optimum health….including a diversity of colourful vegetables and fruit at each meal time is not only great for the soul but provides us with an abundant array of minerals, nutrients and phytonutrients that can nourish our body.

And don’t think you can’t eat the rainbow at breakfast or add in some amazing veggies even if like me, you love a sweeter breakfast.
Remember that eating well is about balance without the feelings of restrictions! So by including some amazing veggies to your morning waffles, you still get to enjoy a delicious and indulgent breakfast! Make nutritionally balanced swaps such as processed white flours to wholegrain flour and oat flour, reducing refined sugars and using natural fruits for sweetness, including a rainbow of vegetables and fruit each day (at least 8 a day) eating healthy fats (yep fats don’t make you fat) including rich sources of protein and opting for good quality carbohydrates and not forgetting the addition of chocolate!
It’s about balance…enjoyment…and fun!

Chocolate Veggie Waffles

1 cup @thenourishingkitchenstore HAPPY Oats (ground to flour)
1 tsp baking powder
1 large handful spinach
1 small courgette
1/2 small pear
1cm fresh ginger
@plenishdrinks oat milk
@ombarchocolate choc
@manilife_ peanut butter

Add all your ingredients into a blender and whizz until you have a nice smooth pancake/waffle consistency.

pour into a waffle mould or waffle maker and cook either in the oven for 10 minutes or cook in the waffle maker for a few minutes until cooked through. Serve with peanut butter, chocolate and berries
