Coconut and Pecan Granola

This is the one food I love to prep for the week ahead for those busy mornings or to simple eat straight from the jar!

I love to pack ours with nuts and seeds for added protein and all those amazing healthy fats! Add in some oats, coconut and you have a deliciously crunchy start to the day! 

This is packed with oats that have an amazing fibre in the form of beta glucan that helps to support the health of our gut by increasing the growth of good bacteria within our digestive tract.

It can also help support blood sugar levels, insulin response and increase feelings of fullness.

Oats also contain wonderful antioxidants and beneficial polyphenols as well as manganese, magnesium, iron, B vitamins, zinc, folate and phosphorus which can all support energy levels, heart health, brain health, hormonal balance, bone health and gut health. 

Pumpkin seeds are loaded with zinc which is a wonderful nutrient for immune health as well as hormonal health. 

Pecans are packed with copper needed for nerve cell function, immune health, and the production of red blood cells, they are high in Vitamin B1 essential for converting carbohydrates into energy to help fuel your body as well as Zinc needed for immune function, as well as cell growth, brain function, and wound healing.

Add in some wonderful coconut which is packed with Coconuts are especially high in manganese, which is essential for bone health and the metabolism of carbohydrates, proteins, and cholesterol as well as copper and iron, which help form red blood cells, as well as selenium, an important antioxidant that protects your cells.

Plus with the addition of bananas, there’s no need for any sugar so it’s the perfect morning breakfast that won’t rise those blood sugar level

Coconut and pecan granola

1 cup pumpkin seeds

1/2 cup @flahavansuk rolled oats 

1/2 cup @flahavansuk jumbo oats 

3/4 cup dessicated coconut

1 cup flaked coconut 

1 cup pecans 

1/2 cup walnuts 

2 heaped tbsp @naturya energy blend 

1 ripe banana

4 tbsp @mightysesameco tahini

1/4 cup extra virgin olive oil 


In a bowl add the pumpkin seeds, oats, coconut, pecans, walnuts and energy blend and mix together 

In a small bowl add the banana and mash well, add the tahini and extra virgin olive oil and mix together 

Add this to the coconut mix and stir through making sure to coat everything.

Pour into a baking tray and spread our leaving some spaces to allow air to circulate (this will help to make it go crispy) 

Pop into a pre heated oven at 150c for around 15-20 minutes or until golden abs crisp 

Remove from the oven and at this point you can drop over some pieces of dark chocolate to melt and harden

Store in a airtight container.
