Due to this nationwide lockdown it’s safe to say that baking and cooking will be a big feature in peoples homes, which is actually a good thing.
Im always saying that the love of cooking and the knowledge of cooking seems to be lacking these days with access to fast foods, convenience foods so going back to basics is good for everyone.
By using simple ingredients to create nutritious meals isn’t hard to do and doesn’t have to be complicated and adding in some sweet treat recipes to the mix is never a bad thing.
And even banana bread can be made healthy and taste just as amazing.
1 1/2 cups oat flour
1/4 cup teff flour (or more oat flour)
1/2 cup toasted desiccated coconut
1 tsp baking powder
1/2 tsp bicarbonate of soda
Pinch of salt
1/4 – 1/3 cup coconut sugar
2 large or 3 small mashed bananas
1/2 courgette grated
1/4 cup extra virgin olive oil
1/4 cup yoghurt (we use alpro)
1/4 milk (dairy free)
2 chia eggs or 2 eggs
1 tbsp apple cider vinegar
Pre heat the oven to 160c and line a loaf tin.
In a bowl add the dry ingredients and mix together
In a jug add the milk along with the apple cider vinegar and leave to rest
Add the mashed bananas, courgette, chia eggs, extra virgin olive oil, yoghurt and pour this along with the milk into the dry ingredients and stir
Pour the batter into a lined loaf tin and pop into the oven for around 55 minutes -1 hour
Remove and allow to cool before tucking in
Feel free to add in cinnamon for warm flavour or even some chocolate chips
