Fig, Walnut & Dark Chocolate Oat Bars

Eating a snack that provides a nourishing energy fix is exactly what my delicious Fig, Walnut and Dark Chocolate Flapjack provides.

Often people resort to sugar laden snacks as an energy boost when blood sugar levels dip but ensuring that you support blood sugar levels throughout the day with meals that consist of complex carbohydrates, a good source of protein, healthy fats and nourishing vegetables and fruit, you can help to stabilise blood sugar levels.

But on those days that you need a little extra, these bars are the perfect option…combining wholegrain oats, seeds, tahini, antioxidant rich fig and dark chocolate as well as the amazing omega 3 rich walnuts, they provide a wonderful and filling snack option. They are perfect for lunchboxes (omit the walnuts for school) and they are a great on the go snack and even work well crumbled up with some yoghurt.

Remember that our body becomes accustomed to resorting to sugary food and drinks because we are not balancing out our blood sugar levels so to avoid those energy slumps, eat to nourish your body at each meal time.

Fig, Walnut & Dark Chocolate Oat Bars

1 cup oat flour

2 cups rolled oats (not jumbo)

2 tbsp milled chia seeds (optional)

100g vegan butter

3 tbsp maple syrup

1/4 cup coconut sugar

3 tbsp thick tahini

4 dried figs (chopped)

handful of walnuts chopped

handful of pumpkin seeds chopped

50g Dark Chocolate melted

In a bowl add the oat flour, oats, milled chia seeds, coconut sugar, figs, walnuts and pumpkin seeds and mix together

In a bowl add the melted butter, maple syrup, and tahini and stir to incorporate them all together

pour the butter mixture in with the oat mixture and bring everything together.

line a square cake tin approx 8” or two loaf tins and spoon the mixture into the pan and press down firmly using the back of a spoon.

Pop into a pre heated oven at 160c for approximately 20-25 minutes or until golden round the edges and not too soft in the middle.

remove from the oven and allow to cool fully before removing from the pan

melt the dark chocolate and either cut the oat bars into bar sizes and then drizzle with chocolate or simply drizzle the chocolate over and then cut them up.

store in an airtight container and enjoy.
