Yep it’s that time again when festive treats and foods will fill Instagram…many people think it’s an all or nothing when it comes to eating sweet treats but that shouldn’t be the case!
Eating isn’t about restriction or eliminating food groups but about eating well, balanced and to enjoy the food you eat!
Eating whole unprocessed foods is essential with lots of wonderful colourful vegetables and fruit but that doesn’t mean there isn’t a place for some cake in there!
It’s about being clever with the ingredients you use…Think wholegrain flour and oat flour instead of processed white flour, include unrefined sugars such as coconut sugar, dates etc, include fruits to give sweetness such as bananas or apples! Add in wonderful nuts and seeds and include healthy fats such as extra virgin olive oil or coconut oil. Making these small swaps can make a big difference without compromising on taste or sweetness!
This is my delicious Ginger & Pecan Loaf using @belazu_co date molasses and @vitacocoeu coconut oil, with banana for added sweetness! Simple, festive and moorish.
Ginger & Pecan Loaf
2 cups oat flour
2 tbsp corn flour
3 tsp ground ginger
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp cardamom powder
1 tsp baking soda
1/2 tsp baking powder
1/2 cup coconut oil melted
3 mashed bananas
1/4 cup date molasses
1 tsp apple cider vinegar
1/2 cup pecans (gently roasted)
In a bowl add all the dry ingredients and mix well together
Add the melted coconut oil, mashed bananas, date molasses and apple cider vinegar and mix until it’s all incorporated
Add the roasted pecans and fold in
Pour the mixture into a lined loaf tin
Pop into the oven at 160c for approx 50 minutes or until a skewer inserted comes out clean
Remove from the oven and allow to cool before tucking in.
