We just love a delicious snack and even better when they are nourishing and help to support blood sugar levels! You see when we have those dips in energy levels during the day, many people resort to caffeine or sugar laden snacks which inevitably spikes blood sugar levels and results in an even bigger energy crash later so making sure to eat a snack packed with fibre, whole grains, protein and healthy fats is a great way to keep energy levels stable and reduce the burden on blood sugar levels.
Did you know that Oats are packed with amazing fibre in the form of beta glucan that helps to support the health of our gut by increasing the growth of good bacteria within our digestive tract.
It can also help support blood sugar levels, insulin response and increase feelings of fullness.
Oats also contain wonderful antioxidants and beneficial polyphenols. They contain an antioxidant called avenanthramides whuch can lower blood pressure levels by increasing the production of nitric oxide and Avenanthramides also has anti-inflammatory and antioxidants-itching properties.
Not only that but they are also nutrient dense containing high amounts of manganese, magnesium, iron, B vitamins, zinc, folate and phosphorus which can all support energy levels, heart health, brain health, hormonal balance, bone health and gut health.
Nuts and seeds are high in plant-based proteins, healthy fats, and fibre, they provide tryptophan, an amino acid responsible for producing mood-boosting serotonin.

These bars are packed with macadamias, walnuts and tahini with the added bonus of dark chocolate for that antioxidant boost!
Macadamia and walnut bars
1/4 cup macadamia nuts
1/4 cup walnuts
1/2 cup oats
1 tbsp coconut oil
2-3 tbsp tahini
50g dark chocolate
1 tbsp tahini
(Extra tahini for drizzling)
In a blender add the macadamia nuts, walnuts and oats along with the dates, coconut oil and tahini and blitz until it’s all broken down into crumbs and the mixture starts to stick together.
Spoon into a lined dish and smooth down with a back of a spoon.
In a bowl melt the dark chocolate and add the tahini and mix together.
Pour this over the nut and oat mixture and drizzle over some extra tahini swirling it round and pop into the fridge to harden!
