Tempeh Taquitos

1/2 pack Plant Power Tempeh Block

1 tbsp Sainsbury’s Chipotle & Lime Seasoning (feel free to use another Mexican spice mix)

1 tbsp tomato purée

10 corn tortillas

In a mini food processor blend the tempeh until it becomes small chunky texture.

In a pan over a medium heat, add a little olive oil and then add the tempeh, along with the seasoning and salt to taste.

Once this has cooked through add the tomato purée and a little water if it becomes dry.

You want to texture to be soft rather than dry.

Lay out the corn tortillas on a lightly oiled baking tray and fill the tortillas along the middle.

Begin the roll then up pushing any filling back in if it falls out.

Brush the tops of the rolled tortillas with a little more olive oil and pop into the oven for around 10-15 minutes at 170c.

Remove once then are golden in colour.

To make the sauce simply get a large soft avocado and mash, add in the juice of half a lime, and add in chopped coriander, red chilli and salt to taste.

Dip the Taquitos into the avocado sauce and enjoy
