Mocha Oat Cookie Bars
1 1/2 cups oat flour
1 tsp psyllium husk powder
1 tsp bicarbonate of soda
1/3 cup coconut sugar
1/3 cup vegan butter
3 tbsp tahini
1/4 cup mashed banana
1 sachet nootroptic coffe blend zen or 2 tsp instant coffee
Pinch of salt
Dark chocolate chunks
In a bowl add the vegan butter along with the coconut sugar, tahini and mashed banana and mix together until it becomes incorporated and light in colour
Add the oat flour, psyllium husk powder, bicarbonate of soda and coffee blend and mix together until you get a nice smooth cookie dough consistency
Add in your chocolate chunks and mix through (leave some said to add to the top)
Using a lined loaf tin, spoon the dough into the tin and flatten down pressing in some remaining chocolate chunks.
Pop into a pre heated oven at 170c for approx 15 minutes or until golden on the top.
Remove from the oven and allow to cool completely before removing from the tin.
Cut into squares…this recipes will make 8 large cookie bars or 10-12 smaller ones.
