Peanut Butter Twix Slices

With this lockdown now in place for 5 weeks (or is it 5 years?) I think many people have gone back to cooking and baking, which is a great thing and means we are learning to cook and use ingredients again.

I know that banana bread is high up in the baking list with every other post on Instagram being a banana bread image but I decided to break that mould (except for the last two banana breads I made) and make these absolutely delicious and indulgent Peanut Butter Twix Slices.

Everyone that knows me, will know that I have a huge love of peanut butter, some may say obsession but I say it’s warranted. I love that I can use it in sweet and savoury dishes and I can easily eat it straight from the jar…oh yes!

None of this processed stuff, but the 100% natural chunky peanut butter and that’s what these slices are all about! Similar to a millionaires shortbread but even more decadent and addictive.

They are gluten free, vegan and refined sugar free and so easy to make and if you want them even more peanutty you can always add in roasted peanuts to the caramel!!

Peanut Butter Twix Slices


1/2 cups Almond Flour

6 tbsp Peanut Powder/flour

4 tbsp melted coconut oil

3 tbsp maple syrup

pinch of salt

Caramel layer

10 dates (stone removed)

1 tsp coconut oil

2-3 tbsp peanut butter


Chocolate Layer

60g dark chocolate

30g peanut butter


In a mixing bowl add the almond flour, peanut flour, maple syrup, pinch of salt and melted coconut oil and mix until it al comes together.

place in a lined baking tray (I used a loaf tin) and flatter down and pop into a pre heated oven at 170c for approximately 10-15 minutes or until nicely golden.

remove from the oven and allow to cool.

To make the caramel layer

Add the dates to a food processor (if hard, allow to soften in some boiling water for around 5-10 minutes)

Add the peanut butter, coconut oil, along with a pinch of salt, and a little water and blitz until you get a smooth caramel (add More water if needed to get a smooth paste)

Spoon onto the base and pop into the fridge while you make the chocolate layer.

To make the chocolate layer

Melt the dark chocolate and add the peanut butter.
Stir well and then pour this over the slices, smoothing as you go and pop into the fridge to firm up.

Cut into squares and enjoy
