Plant Based Pizza

Don’t think that because your not eating meat and dairy that you have to miss out on favourites such as pizza!!

This plant based pizza is not only easy to make but tastes amazing and trust me when I say even the meat eaters will enjoy it!

Usinh a simple flatbread recipe rather than spending hours waiting for the dough to prove, a simple tomato sauce and some delicious marinated tempeh you have a wonderful meal that is packed with protein, wholegrains and antioxidants…quite the meal compared with a dominos pizza!!

Plant based Pizza

dough

100g spelt flour

100g plain flour (sub for more spelt if needed)

2 tsp baking powder

salt

200g yoghurt (plain alpro)

tomato sauce

200g Cherry tomatoes

2 small mini red peppers

1 large garlic clove

1 tsp black garlic (optional)

salt

2 tbsp tomato puree

Tempeh

1/2 block Plant Power Tempeh

1 tbsp soy sauce

1/2 tsp paprika

olive oil

salt

Vegan mozzarella

Black olives

Method

To make the tomatoes sauce, heat some oil in a pan and add the chopped tomatoes and peppers along with some salt and optional paprika and cook until they tomatoes have broken down and are nicely softened and then add the garlic and cook for a couple more minutes.

Add the black garlic, tomato purée and a little water and stir through and cook until you have a nice thick tomato sauce.

Tempeh

Break the tempeh into small bits and add to a bowl along with the soy sauce, paprika, salt and olive oil and coat well. Allow to marinate for around 10 minutes.

Dough

in a bowl add the flour, salt, baking powder and slowly add the yoghurt until you get a nicely soft pillowy dough.

Turn the dough out onto a floured work surface and roll into a large pizza shape keeping it quite thin. Feel free to make this into two smaller pizzas.

Top with the tomato sauce, sprinkle over some vegan mozzarella, the crumbled tempeh and some black olives and pop into the oven for approximately 20 minutes until nicely golden on top.

serve with a delicious green salad and enjoy
