It maybe warm this weekend, but who can resist a delicious homemade Crumble?!!
This has got to be my all time favourite dessert and unlike the traditional version this is not loaded with refined flour and high amounts of sugar, in fact this is packed with goodness and still tastes amazing!
When I talk about balance, I often discuss the healthy swaps because we all want to enjoy a sweet delicious treat but that doesn’t mean it can’t also have wonderful natural and healthy ingredients.
By swapping out refined white flour abs sugar, I love to use oat flour which is packed with wholegrain goodness, using whole meal/spelt/rye are great alternatives for white flour which are packed with nutrients as well as that all important fibre that helps to slow down the breakdown of sugars within the body reducing that blood sugar rise and crash!
Okay so using any form of sugar is at the end of the day…sugar! But how we use it and how much we use can make a big difference! Including protein and healthy fats can help slow down the breakdown of these sugars as well as fibre! Using less than you normally would can also reduce that sugar burden! Using natural fruits for sweetness can help to reduce the refined sugars used in baked goodies!
This recipes uses amazing apples with the addition of strawberries and…Peanut Butter! Yep you heard right and trust me when I say, it’s amazing 💕
Strawberry and apple peanut butter crumble
1 cup + 1/4 cup oat flour
1/3 cup vegan butter
2 tbsp @manilife_ peanut butter
1/4 cup coconut sugar
1 large apple (chopped into small pieces)
6 strawberries (cut into small pieces)
4 tsp @manilife_ peanut butter
1 tsp @naturya agave syrup (optional)
In a bowl combine the flour, and coconut sugar and mix together
Add the vegan butter and peanut butter and using your hands, work the butter until all the flour is mixed in and you get some lovely chunks
In an oven proof dish add the apple, strawberries drizzle with a little agave syrup (if using) spoon the peanut butter and mix together
Crumble the flour mixture to cover the whole top of the apple and strawberry mixture and place into a pre heated oven at 170c for approximately 30 minutes or until bubbling and golden on the top.
Remove from the oven and allow to cool slightly and enjoy
