Sweet Potato Falafel
1 tin chickpeas drained, washed and dried
1 medium sweet potato
2 tsp ground cumin
1 tsp ground coriander
1/2 tsp cinnamon
2 tsp ras el hanout
1 small onion finely chopped
1 garlic clove
3 – 4 tbsp flour
Salt and pepper
Cut the sweet potato into slices and place in a steam and steam until tender. Allow to cool completely
In a food processor, add all the ingredients including the sweet potato and blitz.
With your hands, combine small amounts of the mixture and roll into balls and pop into the fridge until ready to cook (you can flatten them so that they cook all the way through)
Add a little olive oil to a pan and pop onto a medium high heat. Once hot, place the falafels into the pan and cook evenly until crispy on the outside and cooked through.
Serve with hummus, fattoush, salad and flat bread
