
Sweetcorn & Sundried Tomato Waffles

Sweet corn & Sundried Tomato Waffles
1 cup chickpea flour
1 tsp sweet paprika
1 tsp baking powder
Salt
1/3 sweet corn (cooked)
6 sundried tomatoes sliced
Milk or water
In a bowl add the chickpea flour, baking powder, paprika, salt, and add enough milk or water to create a waffle mixture (similar to pancake batter)
Add the sweet corn and sundried tomatoes and stir through.
Either using a waffle iron or a waffle mould, cook the batter until you get nice soft pillowy waffles and enjoy with an avocado, tomato pico de gallo
