Muesli is one of those great quick and easy breakfasts, packed with amazing nutrient dense oats and of course making it at home you can add in anything you like.
I often make different versions and this one is probably our favourite…Toasted Almond & Mulberry Muesli
You see Oats are packed full of wonderful complex carbohydrates that can help to stabilise blood sugar levels.
Oats also contain beta glucan a wonderful fibre that helps support heart health and gut health.
Mulberries are fairly high in protein for a berry and contain high amounts of fibre, Vitamin C, K & E, iron and potassium.
Almonds are a great source of protein, fibre and vitamin E as well as magesnium and healthy fats. They are also great for gut health.
So why not start your day with a delicious bowl of muesli packed full of wonderful health boosting nutrients.
Toasted Almond & Mulberry Muesli
1 cup rolled oats
2/3 cup almond flakes
1/4 cup pumpkin seeds
1 tsp cinnamon
1/4 tsp ginger
1/4 tsp all spice
Pinch of nutmeg
Pinch of ground cardamom
A small pinch of Himalayan sea salt
1/2 cup fried mulberries
In a pan add the flakes almonds and gently toast until nicely golden.
In a bowl add the oats, almonds and pumpkin seeds, along with the spices and mix well (please feel free to add in any nuts and seeds you fancy) add the mulberries and store in an airtight container
