Spiced Cod Traybake
1 small butternut squash
1 aubergine
1 courgette
1 large red onion
4 cod fillets
1 tub Olives
3 tsp baharat
Muhammara dip
2 red peppers
Handful of walnuts
1 tsp cumin
1 tsp sweet paprika
1 tsp pomegranate molasses
1 garlic clove
In a large tray add the red peppers and place in the oven and cook until completely softened
Remove from the oven and allow to cool remove the seeds and Place in a blender along with the remaining Muhammara ingredients and whizz until you get a nice chunky dip consistency adding in extra virgin olive oil if needed
Cut all the veg into equal size pieces and place on the same tray that you had the red peppers on
Drizzle with olive oil and 2 tsp spice mix and olive oil and salt and coat well! Pop into the oven at 180c for 20 minutes
Remove from the oven and place the cod fillets onto the veg tucking them in
Coat the cod fillets with the remaining spice mix and Drizzle with olive oil, season well! Pop back into the oven and cook for a further 15 minutes or until cooked through
Remove from the oven and add the olives into the tray and spoon over the muhammara onto each cod fillet and serve!
This can be made using tofu of tempeh or even falafel
