Kale contains antioxidants such as lutein and beta-carotene, which can reduce the risk of diseases caused by oxidative stress.

Spinach is packed with folate, which plays a key role in red blood cell production and also contains a whopping amount of vitamin K that can help protect bones from osteoporosis and help to prevent against inflammatory diseases.
Spinach also contains Vitamin A and C as well as non heme iron.

Throw in some amazing nutrient dense avocado which is loaded with healthy fats, fibre, antioxidants and potassium!

These pancakes are easy to make and taste amazing and make for the perfect start to the day!


Ingredients

1/2 courgette sliced
1/2 banana
1 handful of spinach leaves and kale leaves
1/2 avocado
1 cup oat flour
2 tsp baking powder
2 tbsp SuperGreen blend
2 tsp apple cider vinegar or 1 egg


Add the courgette, banana, spinach, kale, avocado and supergreens powder into a high speed blender, to make a smoothie base.

Blend until smooth and then add your oat flour, baking powder, apple cider vinegar or egg into a bowl and mix together to get a pancake consistency

Heat a little olive oil in a pan and cook the pancakes and then top them with some nut butter for extra nuttiness, and seasonal berries and enjoy

I also used the smoothie base for a smoothie and yoghurt bowl loaded with granola and berries!
