Avocado toast

Keep it simple…breakfast doesnt have to be complicated!

Just make sure that it is nourishing so step away from the cereal and white bread but instead make sure you follow the simple rules of each meal…FIBRE/COLOUR, PROTEIN, HEALTHY FATS and complex carbs.

Avocado is an amazing healthy fat loaded with fibre and potassium as well as antioxidants.

Ingredients

  • 2 slices sourdough bread

  • 1 avocado

  • radishes slices

  • rocket leaves

  • microgreens or cress

  • Flaked mackarel or salmon


Gently toast your sourdough and drizzle with a little extra virgin olive oil

Mash the avocado adding salt to taste and spoon over the sourdough

Top with the radishes, rocket leaves, microgreens and flaked oily fish for added protein and healthy fats.
