Salmon power bowl

Salmon is an amazing and versatile oily fish and works in so many dishes. This simple salmon power bowl can be loaded with any veg you have to hand and makes for an easy mid week meal! It contains your FIBRE/COLOUR, PROTEIN, HEALTHY FATS and COMPLEX CARBS.

Did you know that salmon is loaded with omega 3 fatty acids which have been shown to reduce inflammation, lower blood pressure, and decrease risk factors for disease.

Salmon is a great source of protein, healthy fats, and various essential vitamins and minerals.

Did you know that the skin of a salmon contains the highest concentration of omega-3 fatty acids on the fish, so make sure to enjoy the skin and not remove it before cooking.


Ingredients

  • 2 salmond fillets with skin on

  • 1 large sweet potato

  • 100g brussel sprouts

  • 1 cup cooked quinoa

  • baby spinach leaves

  • baby radishes


Cut the veg into small pieces and place on a roasting tray and bake for approx 25-30 minutes

pan fry the salmon until cooked through

Mix the quinoa with the baby spinach and season well

top with spinach and quinoa mix with the sweet potato, brussels and radishes and finish off with the salmon
