Shakshuka

Looking for a delicious brunch dish then this has you covered loaded with protein, healthy fats, fibre and colour! We love this dish and it packs quite the nutritional punch!

Did you know that tomatoes are loaded with an antioxidant called lycopene which is more active when tomatoes are cooked! Lycopene protects the body from free radical stress that can damage DNA, it has sun protection properties which can protect the skin from dna damage, it can help to support heart health and a lower risk of certain types of cancer.

add in some delicious vitamin A rich sweet potato loaded with fibre, some fibre rich lentils and you have a wonderful gut healthy cheap dish!


1 red onion

1 garlic cloves

100g cherry tomatoes

1 tsp paprika

2 tsp cumin

1 sweet potato

1 large red pepper

1 small tin of lentils

Salt

Extra virgin olive oil


In a pan gently pan fry the onion, paprika, cumin, tomato sweet potato and red pepper until nicely softened making sure to season well and then add the garlic along and gently cook until softened!


Cook the sauce down until it becomes a little thicker, adding in a little water to stop it from drying out. Add in the tin of lentils and mix through and cook for around 5 minutes on a gentle (low) heat


Make two wells into the sauce and crack two eggs into them and cook for a minute and then add a lid and finish cooking them until the are cooked through and serve with some crunchy sourdough croutons cooked in extra virgin olive oil and a little coriander to finish
