Antioxidant rich cacao pancakes

Antioxidants are not just important for adults but for kids too and with the school holidays upon us this is a great time to have some fun in the kitchen and these antioxidant rich pancakes are a great way to enjoy delicious nourishing foods but in pancakes!

Did you know that Antioxidants help regulate oxidative stress and inflammation in the immune system. That helps immune cells function normally. Diets low in antioxidants in children and adults can increases the risk of infections and illnesses!

Simple foods such as vegetables and berries are loaded with antioxidants, think cauliflower, kale, blueberries, açai, beets, sweet potato, leafy greens, broccoli, Brussels, even cacao is loaded with antioxidants!

But the best thing about this pancakes is that the veg are hidden and they taste amazing 🤩

Packed with cauliflower, courgette, a little banana for sweetness, ginger, cacao, açai and kale they are packed with gut friendly fibre and health boosting antioxidants!

It’s an easy way to get those extras veggies into kids that tastes good and looks even better!

Antioxidant rich chocolate pancakes

2 cauliflower florets

1/2 courgette

1/2 small banana

2cm ginger

Handful of kale

1 tbsp peanut butter or tahini

1 pack frozen açai (or 1 tbsp açai powder)

1/4 cup almond milk (we use plenish)

2 tbsp cacao powder

1 cup oat flour

1 tsp baking powder

1 tsp apple cider vinegar

in a blender add the veg and banana, ginger, açai, cacao and milk and whizz until smooth!

add the oat flour, baking powder and apple cider vinegar and mix to form a pancake batter

cook in a pan over a medium heat until cooked on both sides and then plate up with a good drizzle of peanut butter, and dark chocolate, some hemp seeds and granola and enjoy!
