Roasted carrots with walnuts and tahini

The humble carrot is often overlooked but carrots are quite the nutritional powerhouse!

The fibre in carrots can help keep blood sugar levels under control. And they're loaded with vitamin A and beta-carotene, which have been shown to lower your risk of diabetes.

Did you know that carrots also contain calcium and vitamin K which can help to strengthen your bones.

Team that up with some wonderful healthy fats from tahini and walnuts and you have yourself a nourishing side dish to any meal!


Ingredients

  • 200g Rainbow carrots (or orange carrots)

  • 2 tsp baharat spice mic

  • 3 tbsp yoghurt

  • 2 tbsp tahini

  • 1/4 cup walnuts

  • coriander leaves


Mix the baharat with a little olive oil and drizzle over the carrots and place into the oven at 180c for approx 25 minutes or until nicely cooked through

mix the tahini and yoghurt in a bowl and once the carrots are cooked, drizzle over the carrots and crush the walnuts and sprinkle over to finish along with the coriander leaves
