Cacao and Veg pancakes

Mornings are about nourishment so start the day with a kick ass breakfast!

Make sure to include protein, healthy fats, fibre and wholegrains and you have yourself the best start to a day!

We love to enjoy pancakes, protein rich yoghurt bowls, porridge, waffles, overnight oats, but it always contains the 4 elements of protein, healthy fats, fibre/colour and wholegrains!

And why not Take your pancakes to the next level by adding in lots of wonderful veggies increasing the fibre and colour and kick starting your 8 a day!


Ingredients

1/3 courgette
1/2 avocado
1/2 banana
2 tbsp cacao +
1 tbsp puritionuk choc and beet protein optional
1 cup oat flour
1 tbsp flaxmeal
1 tsp baking powder
1/4 cup almond milk
2 tsp peanut butter
1 tsp Apple cider vinegar


In a blender add all the ingredients and whizz till smooth Or make up the smoothie and then add the oat flour, baking powder and apple cider vinegar.

Heat a little olive oil in a pan and spoon the batter into the pan and cook each side of the pancakes

Finish off with more peanut butter and melted 100% dark chocolate
